We were off to an amazing start with the Smokey BBQ Ribs. Generously glazed in a sticky BBQ sauce, the ribs were exceptionally meaty and looked stunning. The tender, perfectly slow cooked protein effortlessly fell off the bone and slowly melted away in your mouth. The umami flavours, along with the sweet smokiness of the BBQ sauce, made each mouthful absolutely irresistible.
We also enjoyed the special pasta, Nonna’s Lasagne. Beautifully presented, the homely and hearty lasagne was served with a saucy, rich Bolognese with bold and forward flavours and fragrant tomato base. The sheets of lasagne were soft, though perhaps just slightly overly so, though the sauce more than made up for it. Alongside sat a refreshing and light rocket salad that was crisp and slightly tangy.
Our mains consisted of the Mushroom and Pumpkin Risotto, as well as the Cornerstone Pizza.
The Risotto was beautiful, so homely and rustic with plenty of mushrooms and pumpkin offering an outstanding aroma and a pleasant sweetness. The perfectly cooked arborio rice was just right, at just the right softness and beautifully soaked with the flavoursome sauce surrounding it. Dotted with plenty of goats cheese providing rich creaminess, as well as generous helpings of soft, almost gooey veggies, this flavourful risotto definitely satisfied.
The Cornerstone Pizza wasn’t bad either. The fragrant San Marzano tomato base was fragrant and aromatic. On top sat melted dollops of fior di latte, coupled with thinly sliced, aptly spicy salami that was roasted to a beautiful crisp. The sweetness of semi-dried tomatoes and roasted red peppers were simply delightful, balancing out the saltiness of the salami. However, the dough of the pizza felt rather thick and dense, making for a rather heavy and hefty feed.
Situated in sleepy suburban Coburg, Cornerstone Pizzeria was bustling with locals on a Sunday afternoon. Offering a vast Italian-inspired menu, there are plenty of choices that are both delicious and satisfying. Along with the more than generous portion sizes and bold, forward flavours, you are bound to be in for a decadent Sunday lunch and a siesta afterwards!
