We were off to an amazing start thanks to the Nachos. Topped with a generous helping of sweet, succulent and juicy pulled pork and loaded with sour cream and guacamole, the crisp corn chips below offered an amazing crunch. Held together by plenty of melted cheese and salsa, the flavours were so appetising and simply irresistible, just begging for one more bite.
Our pizzas most definitely impressed. The very Mexican inspired Del Toro pizza was topped with guac, sour cream and corn chips in the middle. Underneath, the pieces of roasted onion, chorizo and corn combined with melted mozzarella created amazing bursts of sweet and savoury sensation. With the occasional piece of jalapeño turning up the heat, the flavours were nothing short of excitable. All served on a thin, crisp base and a puffy, slightly chewy crust that’s been proofed for 48 hours, this was one Mexican pizza that combined the best of Mexican and Italian cuisine!
We also enjoyed the El Seta. The use of a ricotta base created a light yet delightfully creamy sensation that was neither too rich not heavy. This was intertwined with a flavoursome mixture of 24hr marinated mushrooms dotted throughout which made for a beautiful, fragrant aroma and an intense mushroom flavour. Topped with yet more enoki mushrooms and fresh leaves of spinach, this vegetarian pizza certainly delivered a bold, flavoursome hit!
The Sweet Potato Salad was the perfect accompaniment to the pizzas. Lightly dressed with plenty of fresh spinach leaves, the soft roasted slices of sweet potato offered a hint of sweet earthiness. Combined with the sweetness of honey and pinenuts scattered throughout,
Having visited within Chachos the first couple of months their opening, we are definitely pleased to report that the constant desire for improvement and refinement has taken this Mexican-Italian eatery to a whole new level.
Characterised by perfect pizza bases, quality toppings and generous portion sizes, Chachos is destined to become a locals favourite at just the right price point!
